Lemon Basil Walnut Pesto


Pesto is one of my favorite foods that brings to mind sun, warmer weather, and Mediterranean vibes!


This flavorful pesto comes together quickly with a food processor or blender and can enhance a variety of dishes. It tastes even better the next day, so don't be afraid to prepare it in advance! Use it with eggs, as a spread for a sandwich, as a dip for veggies, as a topping for fish or poultry, or as a sauce for pizza and pasta!


SERVINGS: about 12 (2 Tbsp each)


Prep Time: 10-15 minutes


Ingredients: 4 cups basil leaves

3 cloves garlic, peeled

1/2 cup walnuts

1/2 cup shredded parmesan-reggiano cheese

Zest and juice of one lemon

1/4 teaspoon red pepper flakes

1/2 cup extra virgin olive oil, plus more as needed

1/2 teaspoon ground black pepper

1 teaspoon kosher salt, optional


Directions: 1. In a blender or food processor, add basil, garlic, walnuts, parmesan, lemon zest, lemon juice, and red pepper flakes.

2. Pulse several times to first break down the basil.

3. Add olive oil slowly in a single stream, pulsing while adding the olive oil until it is well-blended into the ingredients and forms a loose paste. If pesto is too thick, just add extra olive oil as needed one tablespoon at a time until the desired consistency has been reached.


4. If desired, season with pepper and salt (optional).
